Taco Soup Recipe

Do you like Mexican food?  Can you chop an onion?  Brown some ground beef?  Operate a can opener and stir a pot for an hour?  Then I've got a recipe for YOU!  Today I'm going to share one of my favorite recipes - Taco Soup!  I got this from my mother-in-law, but I'm not sure where it comes from originally.

Taco Soup

Ingredients:
  • One medium yellow onion
  • One pound lean ground beef
  • One packet Taco Seasoning
  • One packet Ranch Dressing Mix
  • One can Tomato Sauce
  • One can Diced Tomatoes
  • One can Rotel
  • One can Corn
  • One can Kidney Beans
  • One can Pinto Beans
  • One can Black Beans
  • One can water
  • Cheddar Cheese
  • Sour Cream
Directions:
  • In a 6 qt pot, brown ground beef with chopped onion.  Drain fat. 
  • Stir in packets of Taco Seasoning and Ranch Dressing Mix. 
  • Add cans of Tomato Sauce, Diced Tomatoes, Rotel, Corn, Kidney Beans, Pinto Beans, Black Beans, and fill up an empty can with water and add that too. 
  • Bring to a boil.  When mixture boils, simmer on stove for an hour, stirring occasionally. 
  • If you're making this meal for later in the day, or you want it to thicken some more, you can put it in a crock pot on low until you're ready to eat.
  • Serve with shredded Cheddar Cheese and Sour Cream.
I love this recipe.  Not only is it tasty and super easy to make, but it also freezes very well.  I divide the leftovers into individual servings and put them into small freezer bags so that I can easily defrost some whenever I like.  That's generally what I like to do when I cook a big meal, and it's so convenient later on.  By the way, you can adjust how spicy or mild your soup is by choosing different Taco Seasoning and Rotel (I like the original).
